Quinoa & Turkey Stuffed Zucchini a.k.a. Zucchini Boats

Quinoa & Turkey Stuffed Zucchini Quinoa & Turkey Stuffed Zucchini Fab Food For Life
This easy and delicious recipe packs a super punch. It's packed with tons of wonderful nutrients, is naturally gluten-free, and is an all-in-one dish. Pair with a side salad and your meal is off the charts!

  • Ingredients:

     medium-large zucchini, halved and seeds removed organic is BEST
    1 canfire roasted tomatoesorganic
    1 canblack beans, drained and rinsedorganic
    1.5 cups quinoa any variety
    1 tbspolive oil
    3 cupsvegetable broth organic
    1/2 lb ground turkey
    2 clovesgarlic, minced
    1 tspground cumin
    1/2 tsphimalayan sea salt
    1/2 tspground black pepper
    2 tsp granulated garlic
    1 cup grated cheese, optional

  • Instructions:
  • Place quinoa in a medium pot over low-medium heat with olive oil. Toast for 3-5 minutes, stirring frequently. Once toasted, add vegetable broth, simmer with lid until most liquid is absorbed.

  • Place ground turkey in a pan with minced garlic. Cook until completely done, no pink shows. Drain. Put back in pan.

  • Add quinoa, black beans, tomatoes, cumin, salt, pepper, and granulated garlic to turkey. Stir until completely mixed.

  • Place zucchini in an oven safe baking dish (I used 2, 4 in each) skin side down. Add mixture by the spoonful into boats. Compress and fill well. Add cheese if desired.

  • Bake in a preheated 350 degree F oven for 35-40 minutes. Zucchini will still be crisp. Serve (2 boats per person) warm and enjoy!
