Light and fresh are two characteristics I always try to bring to my recipes. This hearty and healthy dish features several summer veggies!
Ingredients: 2 chicken breasts, cut into chunks 1 Tbsp olive oil 8 oz mushrooms, diced 2 cups broccoli florets 2 cups spinach, chopped 1 tsp minced garlic 1 cup cherry tomatoes, cut in half 3 Tbsp Tessemae's Zesty Ranch dressing 1 tsp sea salt 1/2 tsp black pepper
Instructions: In a large skillet, saute chicken in olive oil for about 10 minutes, turning once. Add in mushrooms, broccoli, garlic, tomatoes and spinach. Drizzle over dressing and sprinkle salt and pepper over mixture. Cook over medium heat for about 15 minutes or until chicken is completely cooked through.
