Poblanos are my favorite peppers. Smokey, but not too spicy. Heat my kids can tolerate and so much great flavor.

  • Ingredients:


    6 boneless, skinless chicken thighs (about 1.5 lbs)
    salt and pepper to taste
    2 tbsp cider vinegar
    3 tbsp avocado or olive oil, divided
    1 large or 2 small poblano peppers, diced
    1 large red onion, diced
    3 garlic cloves, smashed
    1 tsp ground cumin
    1 can white beans, drained and rinsed
    2 cups low sodium chicken broth
    1 bay leaf
    1 cup coarsely chopped kale leaves
