1 cup brown rice ziti
2 Tbsp Lactaid low fat cottage cheese (1% lactose-free milk fat)
1/4 cup shredded low fat mozzarella cheese
3.5 oz sharp low fat aged cheddar cheese
1/3 cup 2% (Lactaid) milk
1 slice bacon, cooked and diced
Prepare pasta according to package instructions. Drain and return to pot.
Add bacon pieces and all other ingredients except the milk. Stir to combine.
Return pan to burner over low heat and then add 1/2 of the milk. Stir.
Gradually add remaining milk until cheese sauce reaches desired consistency, stirring constantly.
Add more sharp cheddar cheese to increase tanginess, as desired.
