Grilled Salmon with Crunchy Mustard Sauce

This recipe takes little preparation. The mustard adds crunch and honey adds a little sweetness. The sauce also works well with shrimp.

  • Ingredients:

     

    1 1/2 pounds salmon fillets, 1 to 1 1/2 inches thick
    2 tablespoons whole grain or coarse mustard
    2 tablespoons white wine vinegar
    3 cloves garlic, minced
    2 tablespoons honey
    1/2 cup olive oil
    salt and pepper

  • Instructions:

     

    Whisk the mustard, garlic and vinegar together.  Slowly whisk in the honey and then the oil until the sauce is emulsified.  Add salt and pepper to taste. (The sauce can be stored covered in the refigerator for a few hours prior to use.  Bring to room temperature and stir well before serving.)

    Brush the fish on all sides with olive oil.  Sprinkle with salt and pepper to taste.  Grill the salmon on moderately high heat for about 5 minutes.  Turn the fillets over and cook until just cooked but not falling apart (about 5 minutes more).  Do not overcook.

    Remove fish from grill, spoon sauce over each fillet and serve immediately.
