Hanukah Potato Latkes

Zeams Gluten-Free Multigrain Pancake & Waffle mix as delicious Latkes!

  • Ingredients:
    3/4 cup Zemas Gluten-Free Multigrain Pancake & Waffle mix
    3 eggs, beaten
    2 baking potatoes
    1 sweet potato
    2 t. sea salt
    1 t. black pepper
    1 t. garlic powder
    oil for frying
  • Instructions:
    Grate the potatoes by hand.  Place grated potatoes in the center of a clean dish towel and wring out the excess water.

    In a bowl add beaten eggs, Zemas mix, sea salt, pepper, and garlic powder to the potatoes.  Combine.

    In a non-stick pan, heat oil over medium heat.  Oil should be approx. 1/2" deep.

    Place a dollop of 2 heaping T. in the pan and flatten a little.

    Fry for about 2-3 mintues per side or until crisp and browned.

    Tip:  Latkes can be reheated on a lined cookie sheet under a broiler for 1 min or less per side.
    Double the recipe for a party!
