Gluten Free Quiche with Green Chiles, Tomato and Cheddar Cheese

Those of us with food allergies can often feel deprived of the comfort foods that used to bring us joy (and tummy aches!). This gluten free quiche recipe is not the healthiest but it is one of the most delicious gluten free dishes you will ever make. Need proof? My sister (who is eating for two!) made 7 quiches in two weeks for her family and close friends. But mostly for herself. Warning: this is not dairy free and it is 100% addictive!

  • Ingredients:
    1 1/2 c. Shredded Organic Cheddar Cheese
    1/2 c. Shredded Organic Cheddar Cheese (for the topping)
    1/4 c. Fresh Grated Parmesan Cheese
    1/4 c. Diced Tomato
    1/4 c. Sour Cream
    5 Eggs (2 Whole Eggs, 3 Egg Whites)
    1/3 c. Earth Balance Buttery Spread
    1/4 c. Water
    3/4 c. Instant Mashed Potato Flakes (for the crust)
    1/4 c. Instant Mashed Potato Flakes (for the quiche)
    3/4 c. Gluten Free Flour (GF All Purpose or Brown Rice Flour)
    1 can Chopped Green Chiles
    1/4 tsp. Sea Salt (for the crust)
    3/4 tsp. Sea Salt (for the quiche)
    1 tsp. Chives
