Bites and beans make a simple, filling burrito with plenty of protein. Add fresh greens and avocado for even more nutrition. We used Rudi's Gluten Free Tortillas here, but you could use what ever tortilla makes you the most happy! Make this in less than 15 minutes for a filling, yummy lunch or dinner.
Ingredients:
1 tortilla 1 TBSP coconut oil 5 Hilary's Eat Well Original Veggie Bites (cooked) 1/2 cup black beans or adzuki beans (rinsed) 1/3 cup salsa 1 cup spinach or greens (raw)
Instructions:Heat a skillet to medium. Add the coconut oil and swirl to cover. Place the tortilla in the pan and layer all your ingredients down the center. Feel free to add anything you'd like to it. We love toppings like avacado, red onion, grated cheese (or vegan cheese), and pumpkin seeds. Fold over one side, then roll placing the opening facing down. Heat for a few minutes until the bottom is lightly brown. Turn and cook for another few minutes until everything is hot and bubbly.
