Easy, Healthy Meatloaf

  • Ingredients: 2 lbs of ground beef, turkey, chicken or venison
    3-4 (total) squash and/or zucchini, shredded
    1/2 c. gluten-free oats
    4 Glutino crackers, crumbled
    1 egg
    1-2 Tbsp. Worcestershire sauce
    1 tsp. spaghetti seasoning
    1 Tbsp. minced garlic
    1/2 medium sized onion, chopped to the desired size
    salt & pepper to taste

    1/2 c. ketchup
    2 Tbsp mustard, prepared
    2 Tbsp cane sugar (or brown sugar)

  • Instructions: Preheat your oven to 350 degrees. Shred your squash and zucchini; I simply used my cheese grater.

    Chop your onion and add into the mixture. Continue to add in all of the remaining ingredients, minus the last three listed. Mix ingredients very well and place in a greased 9×9 pan; you should end up with a mixture that looks like the picture below (or something close).

    Mix together the last three ingredients in a separate bowl. Spread over the meatloaf and bake in the oven for 1 hour.
