Sweet Potato Noodles with Spinach and Bacon Sweet Potato Noodles with Spinach and Bacon I'm a Celiac
Gluten Free can be simple and easy when you use basic ingredients and dress them up!

  • Ingredients: 1 tbsp olive oil
    ½ red onion, chopped
    ¼ tsp minced garlic
    1 sweet potato – spiralized into regular spaghetti noodles
    salt and pepper
    1 tsp GF seasoning blend - I use Love from Virtuous Living
    ½ cup water
    1 GF vegetable bouillon cube - I use Massel Vegetable 7's
    2 handfuls spinach, chopped
    4 sliced of cooked bacon, chopped

  • Instructions: Heat a large skillet over medium high heat.  Then add the olive oil, garlic and onions. Stir and cook for 3 minutes.  Then add in the spiralized sweet potatoes, salt and pepper and seasoning blend.  Stir and cook for 3 minutes.  Then add water, bouillon cube and spinach.  Stir and cook for 3 minutes.  Serve with the bacon pieces. 

    This recipe is for 2 adult portions.  You will need to adjust to make for a family.
