Gluten Free Frying Mixture

Score one for gluten-free frying! Frying had been one of my struggles. Frying gluten-free can be tricky, especially if you’re wanting to get away from the “grit” associated with rice flour, and oftentimes the gluten-free flour doesn't stick or stay once fried.

Ingredients:
potato flour, maybe 1/4 c
tapioca starch/flour, 1 tbsp
mesca flour, 1/2 c
salt, 1/2 tsp
baking powder, 1 tsp
baking soda, 1/4 tsp - Instructions: Mix all ingredients together and use as a frying "flour" for your chicken, beef, pork, etc.

- Serving suggestions: Try using this in conjunction with an egg & dairy-free milk batter. Flour the meat, dip in the egg/milk mixture & then re-coat with the "four" mix before frying. This makes for a thick, crispy crust!
