I've mentioned before that chocolate is my weakness... and Enjoy Life Foods are a huge part of my addiction. They make some fantastic chocolate chips that are free of the 8 major allergens. In addition, they sell plenty of other food items: bars, chips, snacks, etc.
Well - they JUST released a new line of baking mixes!!!! I was so excited as I know how careful they are to adhering to their allergy-friendly principles. The mixes will be available in stores later this fall but they are available for purchase on their website here. Want to know what I think?!
First, we tried the Pancake/Waffle Mix. I didn't have the best luck with the waffles. Maybe it was me, maybe it was my waffle iron. Either way, the waffle mix stuck to the iron and made quite a mess. I basically just scraped the cooked waffles off the iron onto a serving dish. We then topped it with syrup and ate it - no complaints from the taste testers! It may not have looked pretty but tasted just fine! We also made pancakes and obviously these went much better. The pancakes didn't have that fluff or rising factor but it is difficult to create an allergy-friendly pancake so I was impressed with the quality..
Next, we tried the all-purpose flour mix. Let me just say - it's a winner! I used it in a one-to-one ratio for wheat flour in several different batches of cookies. I had a book signing in which I wanted to bring 4 varieties of fresh baked cookies. To save time, I used the Enjoy Life AP flour mix and they came out wonderful... just like all those times I've made before with traditional flours. If I can find a flour that is a true one-to-one ratio, I'm VERY pleased! We also made pancakes, breading, etc with all of this with great results.
The big favorite at our house was the Muffin Mix. I added some blueberries into the batter and added just a quick streusel topping. Other than that I prepared the mix just as directed. It made about 12 standard muffins. They were very moist and rose nicely - which are two key components of our "perfect" muffin.
Finally, we tried the brownie mix. I needed a quick dessert option for 4th of July and this was a life saver. I made the mix just as instructed. The only difference was I topped them with butterscotch chips and Enjoy Life Chocolate Chips. They were a huge hit! Good enough that I didn't even get a picture...
I actually got the Crunchy Flax Cereal for my husband to try and he likes it. He said it reminded him of Grapenuts Cereal. He said it was very filling, yet tasty - he added some fresh chopped fruit to his bowl.
