This is one of my favorite picnic dishes. It can be quickly thrown together in the morning, doesn't need to be kept super cold, and only gets better the longer it sits.
Ingredients:14 - 16 white mushrooms, cleaned and sliced 1/4 of a red onion, minced 1/4 cup good extra virgin olive oil 1/8 cup white wine vinegar 1/2 tsp salt 1/2 tsp sugar 1/4 cup fresh basil, chopped 1 Tbsp fresh thyme leaves, chopped black pepper, to taste freshly grated Parmesan (optional)
Special ingredients:no dried fruits, no fresh / raw fruits that don't get cooked by the end of the recipe, no seeds, no beans / legumes / pulses, no dried / ground spices, no meat / poultry, no alcohol, no grains
