Sweet Potato Cauliflower Mash

This is a great alternative to mashed potatoes

  • Ingredients: 2 lbs of sweet potatoes
    2 cups of cauliflower florets 
    4 tablespoons of your choice of milk (I used coconut milk) 
    1/8 cup plain Chobani Greek Yogurt
    ½ teaspoon of garlic powder
    ½ teaspoon pumpkin pie spice or to taste
    salt and pepper to taste
  • Instructions:  
    - Peel and cut the sweet potatoes into 1 ½ inch chunks. 

    - In a large pot, steam the sweet potatoes and cauliflower with 1 inch of water in the bottom of the pot. The sweet potatoes and cauliflower should be ready within 20-25 minutes or when they are fork tender. 

    - Place the vegetables in a large bowl with the milk and mash the potatoes and the cauliflower florets. 

    - Stir in the Chobani Greek Yogurt, garlic powder, pumpkie pie spice, salt, and pepper. If the mixture is too thick, add an additional one tablespoon of milk at a time until you have achieved the consistency of your choice.
