This is absolutely one of my new favorite ways to have cauliflower & broccoli. For all of you who want to add an extra serving of vegetables to your diet, this recipe is for you. If you have a slight obsession with cauliflower and/or broccoli like myself, you’ll love these fritters.

  • Ingredients:    

    2 cups of cauliflower 
    2 cups of broccoli 
    2 large eggs 
    ½ teaspoon salt 
    ½ teaspoon Italian seasoning 
    ½ teaspoon pepper
    ¼ teaspoon garlic powder 
    ¼ cup of vegan shredded cheese
  • Instructions:    
    1) Cut up cauliflower and broccoli into florets and then process it in the food processor. 

    2) Transfer riced cauliflower & broccoli to a microwave safe dish and microwave on high for 8 minutes, or until cooked. 

    3) Place cauliflower & broccoli in a towel and twist it to squeeze as much moisture as you can out of it. 

    4) Combine cauliflower, broccoli, shredded cheese, eggs, and seasonings in a bowl. 

    5) Shape into patties and pan fry for 3-4 minutes on each side or until golden brown. 

    6) Enjoy!
