Ingredients:1 can Chickpeas, rinsed and drained
1 block Firm Tofu, pressed and drained and diced into small squares
3 celery ribs, diced
1 medium sized green apple, diced small (I like to use Granny Smith)
1/2 cup pecans
1/2 cup raisins
1 tbsp. curry powder
1 teaspoon turmeric
2 tablespoons raw Agave
¼ cup Red Onion, diced small
2 cloves garlic, minced
Salt and freshly ground black pepper to taste
3 tablespoons vegan mayonnaise – or more to reach desired consistency
