1 Boar's Head Bratwurst link (or other gluten-free, dairy-free & soy-free bratwurst link)
1 tsp olive oil
1/2 cup green beans, cut into 1" pieces
1 tbsp fresh parsley, coarsely chopped
1 handful fresh arugula leaves, whole
Warm bratwurst in a small, cast-iron skillet over medium heat, turning occasionally to brown. Remove to cutting board.
Heat olive oil in the same pan. Add green beans and saute for 2-3 minutes, until just softening and bright green, but still crunchy.
Meanwhile, cut sausage in half lengthwise and then into 1/4" slices. Put in small mixing bowl and add parsley and arugula. Toss to combine. Serve while sausage is still warm.
