4 small boneless, skinless chicken half-breasts
Spicy chipotle rub
1/4 cup frozen corn
2 large tomatoes, cut into 1/2" pieces
1/4 cup fresh cilantro leaves, diced
1 scallion, sliced thinly
Rub spice rub onto chicken and grill at medium heat (~400 degrees) until just cooked
Mix all other ingredients together in a mixing bowl
Cut chicken into diagonal pieces, add to bowl, and toss to mix
