Dairy Free Garlic Mashed Potatoes

Mashed potatoes is a staple dish at the Thanksgiving table. When my family has to go dairy free, it is one of the challenging recipes to recreate because almost all the recipes available are loaded with either cheese, butter, sour cream etc. By removing all the dairy and adding more flavor, we're not only able to bring the dish back, it becomes healthier too.

  • Ingredients:

    1 lb. russet potatoes
    2 1/2 cups chicken stock
    2 cloves fresh garlic
    1 1/2 tsp. sea salt
    2 tsp. garlic powder
    3 Tbs. buttery spread (Earth Balace Soy free)
    2 Tbs. chopped fresh parsley

  • Substitution ideas: Make it vegan by using vegetable stock instead of chicken stock.
    In place of the buttery spread, you can also use bacon grease or the drippings from roasting the turkey.
    To make it extra creamy, add a dallop or two of non-dairy yogurt.
