Ingredients:1 cauliflower broken into florets 1/3 cup fresh basil 1 cup curly parsley 1 clove garlic 1 cucumber diced 1/2 red pepper, diced 1 smal romaine lettuce, sliced 4 green onions, sliced 10 kalamata olive, sliced 1/2 large or 1 small avocado juice of 1 lemon 1/2 cup olive oil 1 tsp sea salt
Instructions:Place cauliflower into a food processor and process it to be rice like. Add in parsley and basil and combine well. Place cauliflower in a bowl and add in chopped pepper, lettuce, onions, olives and cucumber. In a blender or food processor mix avocado, salt, garlic, oil and lemon juice. Mix dressing into salad and serve.
