Marinated Tomato Salad Marinated Tomato Salad Pure and Peanut Free
I've watched fire ravage my hometown in Colorado for two summers, now. This salad was inspired by the hope that rises from the ashes; by a man who lost everything to the flames. Everything, except for his garden, which he found thriving & green among the ashes of his home. In the searing heat, it had been watered, no doubt, by the very same fire hoses that were used to frantically defend his community that tragic evening. His tomatoes were ripe and ready to be picked.

  • Ingredients: 4 - 6 medium mixed variety heirloom or vine-ripened tomatoes
    2 tsp extra virgin olive oil
    1 tsp balsamic vinegar
    1 tsp Dijon mustard
    1 clove of garlic, pushed through a press or finely minced
    a pinch of salt and pepper
    1 Tbsp fresh basil
