A zinger of a chili, all beans but with the heartiness of any meaty alternative!
Ingredients:½ cup white beans 2 medium tomatoes OR ½ can organic diced tomatoes ½ jalapeño pepper, finely chopped ½ yellow onion, diced ½ cup red or green bell pepper

Instructions:1) Bring beans to a boil in a small saucepan. Boil on high for about 20 minutes, then turn off and allow to soak 30-40 minutes. Drain, re-cover with water, and bring back to a boil, reducing to a simmer for another hour or until tender. Set aside.
