I love guacamole but I don't need the onions, tomatoes, jalapenos and cilantro when avocado tastes so good on its own! Pair that with my favorite flavor - citrus - for a fabulous mini-meal comprised of two superfoods. Avocado has more potassium than a banana with much less sugar, so whip up this 3 ingredient recipe in only 5 minutes when you need a satisfying snack. I always serve this dish with gluten free chips at events, parties and especially for Sunday game day and the Superbowl.

This recipe might be the best dish I have ever created, gluten free or otherwise. I cannot describe how fresh and delightful the flavors are, paired with light gluten free grains that leave you feeling satisfied and nothing short of happy. This is one of my go to recipes when I need to bring a dish to a potluck or holiday, as it is quick and easy to cook in large quantities. Just the colors of these ingredients alone make me smile.

Those of us with food allergies can often feel deprived of the comfort foods that used to bring us joy (and tummy aches!). This gluten free quiche recipe is not the healthiest but it is one of the most delicious gluten free dishes you will ever make. Need proof?
