Nut-free, cool, creamy, refreshing summer dessert (or midday treat!) - inspired by Beth at RhubarbandVenison.com

This is one of my favorite picnic dishes. It can be quickly thrown together in the morning, doesn't need to be kept super cold, and only gets better the longer it sits.

There's something charming and old-fashioned about "picnic chicken." When I was a little girl, my grandmother was always looking for an excuse to have a picnic. She took as much care in packing a picnic lunch as she did in cooking Sunday dinner.  I'd help her fill the wicker basket with bread, cheese, salad, and what she called "picnic chicken." The chicken is prepared the night before and is meant to be eaten cold.

I've watched fire ravage my hometown in Colorado for two summers, now. This salad was inspired by the hope that rises from the ashes; by a man who lost everything to the flames. Everything, except for his garden, which he found thriving & green among the ashes of his home. In the searing heat, it had been watered, no doubt, by the very same fire hoses that were used to frantically defend his community that tragic evening. His tomatoes were ripe and ready to be picked.

An easy and healthier alternative to traditional salads that's also super delicious!

These delicate, surprisingly chocolate-y and crepe-like buckwheat pancakes started out as a challenge to myself - and turned into a family favorite. Equally at home under berries and savories, at our house they run the gambit from Sunday brunch to top-8 and yeast-free lunchbox roll-ups to dinner home run, topped with cinnamon-laced ground turkey. Try them for yourself and leave me a comment to let me know what you think!
