Thanksgiving at our house just wouldn't be the same without my mom's acorn squash - decadently sweet, and ridiculously simple to make. Although it takes a little while in the oven, it's easy enough to throw together that it works for workday dinner as well.  And like most things drenched in maple syrup, a pretty easy sell for the kids, too!

Looking for a way to make a salmon salad 'fit in' to a harvest table, we found ourselves swapping out summer fruits for sweetly rich roasted butternut squash.  This salad takes a little time in the oven but very little hands-on prep is required and it can be served either warm or cold, making it a versatile option as an elegant and light dinner entree or a crowd-pleasing party side.  And with its simple dressing it's gluten-, dairy-, soy- and nut-free!

After months of listening to my son pine for the meatballs he could no longer have on his newly dairy-, gluten- and egg-free (among other things) diet, I finally pulled out the mixing bowl and got to work.  These meatballs are far heartier than our previous go-to brand (from a certain furniture store that will remain nameless) and pack well in a thermos for lunch.  Better yet, our joy at a proper meatball spawned a series of "take-off's" that are great for grownups or even as hors d'oerves at your next party.  Check 'em out!
