I love brownies, I mean like who doesn't. Being on the paleo diet or any allergy diet doesn't mean you have to go without some of life's favorite foods, like gluten free, vegan brownies. It took me months to come up with the recipe. I love baking but I am not a baker that can just come up with baked goods recipes on the fly. One day while experimenting with this recipe I used the wrong measuring cup so I had measured everything wrong then wound up adding coconut milk to add moisture. It turned out to be a good mistake because the brownies came out pretty good. I ended up changing some of the measurements and keeping the coconut milk.

Chicken salad is a great summer dish. It's cool and refreshing plus it doesn't require turning the oven on. I got the idea for this recipe at my catering job. There is a Curry Chicken Salad we serve on edible cracker spoons as hors d'oeuvres. However, that chicken salad is made with mayo, so I replaced the mayo with avocado. The chicken breast is quickly made in a pot of boiling water then shredded in the stand mixer which is also used to mix the remaining ingredients.

After I picked over $60 worth of fresh strawberries, I had to find ways to use at least most of them (I could only fit so many in the freezer!). It's been so rainy this month, and I love a good cup of tea and a slice of quick bread, so strawberry quick bread was the natural result of my berry pallets. It took a few tries (and somehow we never ran out of berries!), but we finally nailed down a yummy recipe. Even better---it bakes in just 40 minutes.
