Having my own food allergies and health issues, it is a necessity for me to create tasty, budget friendly and family friendly foods. What I wanted for my first cookbook (Real Food Dinners for Two: Healthy Paleo Recipes at Home), was a simple and affordable product that can be used by anyone! I'm a real cook - meaning that I live a busy life with a busy family that needs delicious and healthy meals FAST! In addition, I know how important it is to use ingredients that are easy to find and relatively inexpensive. While I love cooking and recreating my favorite dishes, I know some people just want a recipe they can trust and can substitute ingredients they have on hand. That is why I included easy ingredient substitutions for many of the recipes found in my book. All of the recipes are gluten-free, grain-free, dairy-free and soy-free and the majority are also egg-free!
(Autumn Spice Cookies)This book was originally designed for "date night". What I miss most about my previous eating lifestyle was having a date night out with my husband. Due to my health, we never eat out and cook all of our meals at home. Instead of giving up date night dinners entirely, we decided we would have "date night in" every Friday. Each week, we prepare a delicious and somewhat "fancy" meal to eat in our dining room. We let the kids enjoy pizza or something in the kitchen - hopefully quietly! That's where these recipes were created. While writing the book, I realized that these recipes aren't just for couples; they are also perfect for roommates, parents, kids, friends, etc. In addition, you can easily adjust the recipe to feed 4+ people!
