After being diagnosed with the autoimmune Celiac Disease at the end of 2010, I saw a serious need for Gluten Free Nutrition Counseling . My goal is to bring Nutrition Education about: Healthy Eating Gluten Free, Living w/Celiac Disease & Gluten Sensitivity, the serious dangers of Cross Contamination, Genetically Modified and Processed foods. The average person consumes over 60,000 pounds of food in their lifetime, we need to understand the important role FOOD plays in our daily lives.
**ADVICE** for Gluten Free Eaters
ALWAYS ALWAYS READ LABELS! If you can’t read labels then ask questions. If you don’t get the answer that you are looking for, then do not eat it. I have made many food mistakes along my Celiac/GlutenFree journey, hopefully I can educate to help others make better decisions along their own.
